What I Eat in a Week as a Vegan – Veganuary

‘What I Eat in a Day/Week as a Vegan’ kind of content is very popular in the YouTube community, and to a slightly lesser extent the blogging community, and I can see why. When you first go vegan, even if you only have to make a small change, you’re going to need some inspiration. For me, having been a lifelong vegetarian, perhaps it should’ve been easy to come up with meal plans. That wasn’t always the case though; I still felt a little lost for the first month or two as I tentatively stepped into veganism.

How would I make delicious food without cheese? Or create nice cakes without eggs? These were probably two of the concerns most relevant to my diet at the time, but every person making some kind of dietary transition will experience different worries and come up against different barriers.

That’s certainly why I watched quite a few of these ‘What I Eat in a Day’ videos in my first several weeks experimenting with this new lifestyle – I actually still watch them sometimes, if I’m lacking a little inspiration myself.

So I thought I’d chip in with a typical week meal plan from my household – some weeks are healthier, some are less healthy, than what I have below. This gives a pretty good idea of most of the things I eat on a weekly basis:

Monday:

Breakfast: chocolate nicecream with cacao nibs (recently switched over from oreos as a healthier option), water

Lunch: mashed potato with veggie sausage and beans, orange juice

Dinner: vegetable stir fry noodles, water

Snacks (morning/afternoon): apple, lentil chips*, smoothie

Tuesday:

Breakfast: beans on toast, smoothie

Packed lunch at work: marmite wholemeal wrap,  dried fruit (strawberry and butternut)*, grapes, small coconut chocolate pot, water

Dinner: lentil sauce with spaghetti and broccoli, water, homemade chocolate cake with soya custard*

Snacks (morning/afternoon): banana, salted pea snacks*, smoothie

Wednesday:

Breakfast: marmite toast, smoothie

Packed lunch at work: leftover lentil sauce with pasta, grapes, vanilla soya yoghurt*, couple of bourbon biscuits

Dinner: brown rice with bean chilli, salad, water, homemade chocolate cake

Snacks (morning/afternoon): dried fruit (apple, pear and pumpkin)*, banana, smoothie

Thursday:

Breakfast: mango nicecream, smoothie

Lunch: chickpea couscous, orange juice

Dinner: macaroni ‘cheese’ with peas, carrots, broccoli and kale, water

Snacks (morning/afternoon): breadsticks and hummus, couple of chocolates

Friday:

Breakfast: porridge made with rice milk and topped with agave syrup*, smoothie

Lunch: falafel wrap, pear, orange juice

Dinner: homemade pizza, salad, water

Snacks (morning/afternoon): vanilla soya yoghurt, homemade cookie

Saturday:

Breakfast: avocado and tomato on toast, orange juice

Lunch: leftover pizza, water

Dinner: rigatoni with a spicy pepper sauce, water

Snacks (morning/afternoon): nicecream

Sunday:

Breakfast: pancakes with melted chocolate and banana, rice milk

Lunch: beans on toast, orange juice

Dinner: homemade lasagna with broccoli and peas, water

Snacks (morning/afternoon): cookie, apple

    I loved this post! My husband and I have decided to go vegan last year and we never looked back! I think it makes us all fall back in love with real food again and I love it! I loved seeing your menu because it keeps instilling the fact that there is so much you can eat and never be bored!

    Great ideas! I’ve been almost vegetarian for about 60 years with fish and cheese being the hardest to give up. But I’m getting ready for my annual Lenten journey to see how close I can get to vegan. Every year, this 40 day period before Easter has helped me get closer, like giving up chicken for good last year. Your posts give me inspiration! I’m looking forward to trying the frozen banana ice “cream.”
