“I think I’ve got biscotti on my sock.”
Needless to say, this was the general mood of my introductory session to vegan biscotti. I’d never even attempted any kind of biscotti before but, oh well, there’s a first time for everything. It was a little sticky, a little messy, but fairly straight forward.
After scouring the internet for recipes, I came across this one by The Cake Merchant that didn’t need any weird ingredients in it, unlike some of the other recipes I found, for which I’d have to go out and specially buy nearly every ingredient for it. I followed all of the steps in the recipe until I got to the kneading stage – at this point, my dough was a little too wet and so I added an extra 80g or so of flour.
In the end I think it turned out okay, and not too far from what I think biscotti should be like. It tasted amazing too: sweet and comforting, like biscuity chocolate marzipan.
Biscotti is such a Christmassy treat, that sickly roasted almond flavour fits in flawlessly next to the orange, cinnamon, ginger and mulled wine tastes that dominate December. This recipe is definitely not one I’ll make at any other time of year, but I think it has the potential to become an annual tradition in my household – depending on the feedback I get for it!
